Researched, not tested
Nothing on CakeDecoratingCalc is hands-on testing. No cake was baked with a stopwatch to produce a bake time here and no product was used in a kitchen to produce a recommendation. Everything is researched from manufacturer specifications, published capacities, product labels, university extension guidance and the consensus of verified owner reviews.
Computed figures are estimates
Bake times on this site are computed from pan geometry using a formula that is printed on every page that uses one. They are starting points, not measurements. A home oven reading 350 F on its dial is routinely 25 F out in either direction, which shifts a bake time further than the whole quoted range. The doneness tests decide, never the clock.
The same applies to weights, coverage figures and quantities. They are derived from dimensions and conventional thicknesses, and real cakes vary. Where a figure is a trade convention rather than a derived or published one, the page says so.
Food safety
This site is not a food-safety authority and does not publish food-safety times or temperatures. Where food safety is genuinely relevant it is raised plainly and without precision it does not have: cream cheese and whipped cream frostings need refrigeration; raw egg white in royal icing and raw egg in mousses are worth swapping for pasteurised egg white or meringue powder when baking for children, older guests or anyone pregnant; and allergen cross contact happens at the mixing bowl, so ask before you bake for other people rather than after.
No product recommended here makes food safe, and none is described as doing so. If you need authoritative guidance on handling, storing or serving food, consult your local food safety authority.
Selling cakes
Selling cakes from a home kitchen is governed by state cottage food law, and those laws vary a great deal in what may be sold, in what quantity, through what channels and with what labelling. Nothing on this site is legal advice. Read your own state law rather than a summary of somebody else's, and speak to your local authority if anything is unclear.
Equipment and injury
Stand mixers, torches and sharp tools can injure you. Follow the manufacturer instructions that came with your equipment, which supersede anything written here, and keep hands and utensils away from a running mixer. Sugar syrup for Italian meringue reaches temperatures that cause serious burns and sticks to skin.
Accuracy and corrections
The figures on this site come from shared maths, which means an error is likely to appear on many pages at once rather than on one. That is a reason to report anything that looks wrong rather than assume it is a typo. Get in touch through the contact page and it will be corrected at the source.
Product prices and availability change constantly and are shown as they were when the page was built.
