Why this site exists

A 12 inch round cake serves 56 people. It also serves 37. Both are correct: the first assumes a wedding portion of one inch by two inches, the second a party portion of one and a half by two, and almost no published chart says which it is using. A reader who takes the wrong figure is short by a third of the room at an event they cannot re-run.

That single ambiguity is the most common error in cake decorating, and it is not the only one of its kind. Half the numbers in this subject are trade conventions presented with the confidence of published standards: how full to fill a pan, how thick a crumb coat is, how long to bake a tier, how many dowels a tier needs. Some of them are genuinely published, some are genuinely derivable, and telling those apart is most of what this site does.

The three bases

Every figure here carries one of three labels, and the rendering code refuses a number without one.

  • Derived. Worked out from measurements by plane geometry or arithmetic. Pan areas, pan volumes, surface areas, capacity ratios, scale factors. Repeat the calculation yourself and you get the same number. Where a shape needs a construction to make its area computable, the construction is stated on the page so you can check it rather than trust it.
  • Published. Printed by a manufacturer, a standards body or a university extension service, and cited on the page. Mixer bowl flour capacities, chocolate tempering ranges by type, high altitude baking adjustments by elevation, and the capacities of shaped pans such as bundts, whose fluted interiors cannot be derived from an outside diameter.
  • Trade convention. How the trade does it, with no physical law behind it. Portion sizes, filling a pan two thirds full, coat thicknesses, dowel spacing, starting bake times. Shops differ on every one of these, so the assumption is always named rather than assumed.

Anything that is none of the three is null, and renders as not established. That is a correct answer. A serving count for a bundt pan does not exist, because a bundt has no flat top to divide into portions, and saying so is more useful than a confident invented figure.

What we do not claim

Nothing on this site is hands-on testing. No cake was baked with a stopwatch to produce a bake time here, and no product was used in a kitchen to produce a recommendation. Everything is researched from manufacturer specifications, published capacities, product labels, university extension guidance and the consensus of verified owner reviews. Any site that claims to have tested forty stand mixers is telling you a story.

Bake times in particular are computed estimates from pan geometry, and every page that carries one shows the formula and says plainly that it is an estimate. The band is wide on purpose: a home oven reading 350 F on its dial is routinely 25 F out in either direction, which moves a bake time further than any of the arithmetic does. The doneness test decides, never the clock.

This is researched guidance, not professional advice. It is not food-safety advice and it is not legal advice, which matters most on the question of selling cakes: that is governed by your state cottage food law and those laws vary a great deal.

How the products are chosen

All 142 products on this site were confirmed live against the Amazon catalogue, and every returned title was read against the product the page claims it is. That check is not ceremonial. In this portfolio, automatic matching has previously inserted a pair of jeans onto a running shoe page and a curtain valance onto a watch page, and a search for a cake pan extender in this very category returned shirt collar extenders among its results.

Cake decorating is also unusually full of unbranded multipacks. Several categories here, including Russian piping tips, acrylic cake discs, stencils, luster dust and acetate collars, returned nothing but the same tooling sold under rotating seller names. Those are not given a fake winner. They render a scoped search link and the page says plainly that no branded product is worth naming, and what to judge instead. The reasoning for every rejection is recorded in the repository rather than left to memory.

What is here

362 pages of worked-out figures, 17 calculators that each show their formula, complete equipment kits at rising budgets, and reference charts built from the same shared maths the calculators use. That last point is the reason the site is structured the way it is: a chart page and a calculator that disagree about the same question would be worse than having neither, so both call the same functions.

Corrections

If a figure here is wrong, it is worth telling us, because it is almost certainly wrong on a hundred pages at once rather than one. The shared maths is a liability as well as a feature. Get in touch through the contact page.
