How full should I fill a cupcake liner?
About two thirds, which is roughly a quarter cup of batter in a standard liner. Fill them fuller and they dome hard and spill over the rim into a mushroom shape that will not sit in a box. Fill them less and the cupcake sits below the top of the paper, which looks mean and makes them awkward to frost.
Do cupcakes bake for the same time as a cake?
No, considerably less, because the batter depth is far smaller and depth is the main driver of bake time. A standard cupcake is usually done well before a cake of the same recipe would be. Start checking early, because the margin between done and dry is much narrower at that size than it is in a full layer.
Can any cake recipe be made as cupcakes?
Most can, though very delicate batters can suffer. A genoise or chiffon that depends on climbing the pan wall behaves differently in a paper liner, which gives it much less to grip. Butter and oil cakes convert without any trouble at all, which is why most cupcake recipes are built on one or the other.
How much frosting does a cupcake take?
