Intermediate tier - Decorating ladders

The Intermediate Cake Decorating Kit

The buy-once setup for somebody decorating regularly: a stand mixer, anodized pans in three sizes, a heavy turntable and the tools that hold a straight edge.

Quick answer

The intermediate step is a stand mixer, a cast iron turntable and anodized aluminum pans in three sizes. These are the three purchases that stop being a constraint, and everything else on the list is a tool that either lasts a lifetime or costs under twenty dollars.

This is the setup for somebody who has decided they like this. The three purchases that matter are the mixer, the turntable and the pans, and all three are things you buy once.

The rest of the list is tools that either last for decades or are cheap enough not to agonise over.

18 items across 4 groups

Prices are the figures Amazon returned when this list was built and they move often, so treat the total as an order of magnitude rather than a quote. Buy the list in stages if it helps: the groups are ordered so the earlier ones are the ones you cannot work without.

Take this list to the shop

The whole list as one printable page: every item, every size, and a running total you can take to the shop. No cost, and you can unsubscribe from the first email.

One email with the list, and occasional new charts. Nothing else, and no third parties.

What you can skip

Skip the airbrush at this stage. It is a genuinely useful tool and it is also the one most likely to sit in a cupboard, because it needs cleaning immediately after every use and a compressor needs somewhere to live.

Skip the 7 quart mixer. A 5 quart bowl handles a two layer 12 inch cake, and the larger machine only earns its price when you are regularly baking more than one tier at a time.

What to upgrade first

Upgrade the thermometer first if you want to make Swiss or Italian meringue buttercream, because both are temperature-driven and guessing does not work. The ThermoWorks Classic Thermapen Instant-Read Thermometer at $105.00 is the accurate probe without the flagship price.

After that, the pan ladder. Every extra tier size you own is another cake you can make without rescaling a recipe.

Before the cake leaves the kitchen

Cream cheese and whipped cream frostings need refrigeration, and plain buttercream softens in a warm room long before it is unsafe, which is a structural problem rather than a health one. Royal icing made with raw egg white, and mousses set with raw egg, are worth swapping for pasteurised egg white or meringue powder when you are baking for children, older guests or anyone pregnant. Ask about allergies before you start rather than after, because cross contact happens at the mixing bowl. And selling cakes rather than giving them away is governed by your state cottage food law, which varies a great deal.
