Quick answer
Chocolate work needs couverture rather than chips, a thermometer accurate to a degree, and a cool hard surface. Dark chocolate tempers at a published 115 to 120 F melt, 82 to 84 F cool and 88 to 90 F working range, and none of those steps can be judged by eye.
ThermoWorks Thermapen ONE Instant-Read Thermometer
A one second reading, which is what makes it usable for Swiss meringue where you are holding a whisk in the other hand and the syrup is still climbing.
Best for: Swiss and Italian meringue, and sugar work
Check price on AmazonChocolate is the one part of cake decorating where the numbers are genuinely published rather than conventional. Couverture manufacturers print tempering ranges for their own products, and the ranges are narrow enough that guessing does not work.
The two purchases that matter are the chocolate and the thermometer. Everything else helps.

|---|---|---|---|
| Callebaut No. 811 Finest Belgian Dark Chocolate Callets, 1 kg The reference dark couverture at about 54 percent, in callets that melt evenly, which is what the published tempering ranges assume. | 1 | $44.85 | Check price |
| Callebaut No. 823 Finest Belgian Milk Chocolate Callets, 1 kg Milk couverture, which needs roughly twice the chocolate of dark for the same ganache firmness. Chips will not behave. | 1 | $47.91 | Check price |
| Valrhona Guanaja 70 Percent Dark Chocolate Feves At 70 percent it sets harder for the same cream, so a ganache recipe written for a 54 percent needs more cream when you swap to this. | 1 | $43.99 | Check price |

Prices are the figures Amazon returned when this list was built and they move often, so treat the total as an order of magnitude rather than a quote. Buy the list in stages if it helps: the groups are ordered so the earlier ones are the ones you cannot work without.

One email with the list, and occasional new charts. Nothing else, and no third parties.
What you can skip
Skip the electric melting pot if you are tempering real couverture. Those pots are built for candy melts and cake pops, which are compound coatings that do not need tempering at all, and they will not hold a true temper on couverture.
Skip the luster dusts and the coloured cocoa butters until a plain tempered shell comes out shiny every time. They cover nothing up.
What to upgrade first
Upgrade the chocolate, not the equipment. The gap between a supermarket bar and a real couverture is far larger than the gap between a good thermometer and a better one, and it is the cocoa butter content that decides whether a ganache sets or sulks.
Before the cake leaves the kitchen
Cream cheese and whipped cream frostings need refrigeration, and plain buttercream softens in a warm room long before it is unsafe, which is a structural problem rather than a health one. Royal icing made with raw egg white, and mousses set with raw egg, are worth swapping for pasteurised egg white or meringue powder when you are baking for children, older guests or anyone pregnant. Ask about allergies before you start rather than after, because cross contact happens at the mixing bowl. And selling cakes rather than giving them away is governed by your state cottage food law, which varies a great deal.
