What you can skip

Skip the commercial mixer at this stage. A 7 quart covers a surprising volume, and the 8 quart NSF machine is a different proposition in weight, noise and price that only makes sense once you are turning orders away.

Skip buying boxes in every size. Two sizes covers nearly everything, and a case you do not use is money sitting in a cupboard.

What to upgrade first

Upgrade the fridge space before any of this, which is not something anyone sells you on a product page. Decorated cakes need somewhere cold to sit, crumb coats need to set, and the constraint on how many orders a home kitchen can take is nearly always refrigeration rather than equipment.
