Quick answer
Use 8 dowels set in a 8 inch circle inside the 16 inch tier, one inch in from where the 10 inch tier will sit. That ring carries about 9.3 lb of finished cake. Add a board under the upper tier and one centre dowel through the stack before it travels.

Best for: a first stacked cake
Check price on AmazonA 10 inch tier weighs roughly 9.3 lb once it is filled and frosted, and all of that lands on the 16 inch tier underneath. Dowels carry it; the cake below does not.
Set 8 dowels in a 8 inch circle, which is the 10 inch footprint less an inch of inset all round, and cut every one of them flush with the surface of the lower tier. A dowel a few millimetres proud will tilt the tier above; a dowel short of the surface carries nothing.
Work out any stack in the tier support calculator.
How many dowels does a 10 inch tier need?
| Figure | Value | Where it comes from |
|---|---|---|
| Dowels required | 8 | Ring circumference divided by 3 in spacing, minimum of four |
| Dowel ring diameter | 8 in | The 10 in footprint less 1 in of inset all round |
| Ring circumference | 25.1 in | Derived from the ring diameter |
| Weight carried | About 9.3 lb | Derived from tier volume at roughly 0.032 lb per cubic inch |
| Board under the upper tier | 12 in | Trade convention, the tier diameter plus 2 in |
| Centre dowel | One, through every tier | Trade convention, and it is what stops a stack shearing in transport |
How do I place and cut the dowels?
The method matters more than the count.
- Chill the lower tier until the buttercream is firm. Dowels pushed into soft cake drag and tear.
- Centre the 10 inch board on top and score round it, then lift it off. That scored circle is your reference.
- Mark the 8 inch dowel circle an inch inside the score, and mark 8 points evenly round it.
- Push one dowel in at a marked point, mark it level with the cake surface, pull it out and cut it there.
- Cut the remaining 7 to the same length, not to their own marks. Cakes are not perfectly level and matching the dowels is what makes the tier above sit flat.
- Push them all in, set the boarded tier on top, and drive one sharpened centre dowel down through everything.
| Lower tier (in) | Upper tier (in) | Dowels | Ring (in) | Weight carried (lb) |
|---|---|---|---|---|
| 14 | 10 | 8 | 8 | 9.3 |
| 14 | 12 | 10 | 10 | 13.4 |
| 16 | 12 | 10 | 10 | 13.4 |
| 16 | 14 | 13 | 12 | 18.3 |
| 18 | 14 | 13 | 12 | 18.3 |
| 14 | 8 | 6 | 6 | 6 |
| 16 | 10 | 8 | 8 | 9.3 |
What does this pair serve?

Before this cake leaves the kitchen
A few things worth knowing before this cake leaves the kitchen. Cream cheese frostings and anything with whipped cream need refrigeration, and plain buttercream softens in a warm room long before it is unsafe, which is a structural problem rather than a health one. Royal icing made with raw egg white, and mousses set with raw egg, are worth swapping for pasteurised egg white or meringue powder when you are baking for children, older guests or anyone pregnant. If you are baking for other people, ask about allergies before you start rather than after, because cross contact happens at the mixing bowl and not at the table. And if you are selling rather than giving cakes away, that is governed by your state cottage food law, which varies a great deal and is worth reading once properly.

Questions people ask
- Can I use straws instead of dowels for a 10 inch tier?
- Thick bubble tea straws do work for small, light tiers, and plenty of decorators use them. At about 9.3 lb this tier is heavy enough that straws are a real risk, because they buckle suddenly rather than bending first. Plastic dowels cost very little and remove the question entirely.
- Why do the dowels have to be cut to the same length?
- Because the tier above rests on whichever dowels are tallest. If one is two millimetres proud, that single dowel carries the whole 9.3 lb and the tier sits at an angle. Cut one dowel to the height of the cake, then cut the rest to match that one rather than measuring each in place, and the load spreads across all 8.
- Do I need a centre dowel as well?
- For a cake that stays put, no. For a cake that goes in a car, yes, without exception. The dowel ring carries vertical load but does nothing against sideways movement, and a stack that meets a roundabout will shear one tier off another. A single sharpened dowel driven down through every tier and board turns the stack into one object.
